Isle of Wight Distillery have today launched a brand new product, and having tried a sample in advance of the launch, we can let you know that, in our opinion, it tastes delicious.
As we’ve come to expect from Xavier Baker, Mermaid Spiced Rum is crafted from a carefully selected blend of sugar cane and molasses rum from Trinidad and the Dominican Republic, distilled in column stills and aged between two and five years in oak bourbon whiskey barrels.
Honouring honour heritage and folklore
Inspired by a long history of shipwrecks bringing Caribbean rum to our Island shores, the unique spirit was created to honour heritage and folklore.
Isle of Wight ingredients
Small Batch Mermaid Spiced Rum is infused with white cherry and apricot, has honey from the Distillery’s own beehives, and black salt from the Island’s floodtides.
It’s also gently spiced with local holy grass, cassia and vanilla.
Plastic-free bottle
Following suit from previous Mermaid products – their original Gin, Pink Gin, Zest Gin and Salt Vodka – Mermaid Spiced Rum is presented in this beautifully-designed plastic-free bottle, from the Island’s first B Corp certified company.
How to serve
In our opinion it tastes great straight, but Xav Baker, co-founder of Isle of Wight Distillery, told News OnTheWight that Mermaid Spiced Rum works really well with Ginger Beer or Ginger Ale, with a sprig of fresh mint and a maraschino cherry to serve.
He also recommended using Mermaid Rum with clarified pineapple and coconut milk to make the perfect Pina Colada cocktail.
