Seaview Hotel’s restaurant retains coveted two AA Rosettes for excellence

The Seaview Hotel’s restaurant, under head chef Mark Wyatt, is one of a handful of venues on the Island to have been awarded two AA Rosettes.

On a recent inspection, the AA Inspector said,

“Dinner was very much enjoyed, delivering a level of quality, technical skill and execution soundly in line with two AA Rosettes.”  

Recognising excellence
Two rosettes are awarded to restaurants that show excellence in cooking styles, consistency and quality of ingredients.

One dish that particularly impressed the inspector was the sage crusted monkfish, clam and mussel chowder with saffron potatoes which he praised for its colourful presentation and ‘good depth and definition of flavours’.

Wyatt: Next year, we’re aiming for three Rosettes
Mark says,

“It has been a very challenging year for the hospitality sector and restaurants especially. When I heard we had retained our two AA rosette rating I was absolutely overwhelmed. Putting an excellent dining experience back at the heart of the Seaview Hotel is something I am committed to doing.

“I intend to keep driving forward with our food offering, providing the right ambience and service that go hand-in-hand to create a special sense of occasion. There will be something for everyone from a sensational three-course dinner in the Aquitania to the tastiest fish and chips in the bar.

“But we won’t stop here, next year, we’re aiming for three Rosettes!”

This is a goal that hotel owner Robin Gardener shares,
