What’s your favourite pancake recipe?

It’s been difficult to avoid the pancake mixture and lemons that have been pushed at us over the last couple of weeks in supermarkets and grocery stores, but at last Pancake Day (aka Shrove Tuesday) has arrived.

Shrove Tuesday is traditionally the day when all the ‘rich foods’ in the kitchen such as sugar, eggs and milk are used up before the beginning of Lent on Ash Wednesday (tomorrow).

These days, we expect what makes up the ‘rich foods’ that need to be consumed before Lent are quite different than in times past.

Many people choose to add current day luxuries such as chocolate and smoked salmon to their pancake meals.

We prefer the classic lemon and sugar, but do let us know what’s your favourite. Sweet or savoury, thin or thick?

    I’m strictly a lemon and sugar man. But I had an aunt who specialised in thick pancakes liberally scatter with raisins.
    At ten years old,not other food was necessary.

  2. Equal parts (by volume) of flour, eggs and milk + a pinch of salt. Serve with sugar and lemon.

  3. It’s lemon and sugar for me too, although I do occasionally add cinnamon to the pancake mixture.
