Henry Sommerfield, a kitchen porter at The Terrace in Yarmouth has been nominated for a prestigious national award – The Staff Canteen Awards – following his remarkable professional and personal development over the past two years.
Henry joined the restaurant initially for a few shifts, looking for some part-time work. At the time, he found social interaction difficult and preferred to stay behind the scenes. However, his commitment and work ethic have since led to a transformation, both professionally and socially.
Leadership and innovation
This summer, Henry’s role expanded significantly. From a casual part-time worker, he took on the responsibility of directing the work of three other kitchen porters (KPs). He set clear goals for his team, helping to improve efficiency and organisation in the busy kitchen environment.
Henry’s innovative approach also led him to create training materials for his colleagues. He produced “how to” videos that demonstrated essential, but less frequent tasks. These videos, along with checklists he developed in collaboration with his team, have ensured the smooth running of kitchen operations.

One of Henry’s key contributions has been the supportive environment he fostered for his team. He created a group where trainees could discuss any issues or concerns without fear of judgement. His leadership has been instrumental in promoting a positive workplace culture, helping his colleagues to thrive.
